| Lemon Rice |
| A simple side dish but with a nice citrus flavour |

| Ingredients |
| 225 g Basmati Rice, washed |
| 2 tbsp Vegetable Oil |
| 2 Garlic Cloves, finely chopped |
| 1 Lemon, grated |
| ½ tsp Black Pepper |
| 500 ml Vegetable Stock |
| Coriander, to garnish |

| Method |
| Fry the rice gently for 3 minutes in the oil. |
| Add the garlic, grated lemon peel and pepper then cook for another minute. |
| Pour in the stock. |
| Bring to the boil and then simmer very slowly until all the liquid has been absorbed. |
| Stir very gently once or twice to avoid sticking. |
