| Rice and Beans |

| Ingredients |
| 400 g Red Kidney Beans |
| 400 ml Coconut Milk |
| 1 Onion, finely chopped |
| 1 Garlic Cloves, finely chopped |
| ½ tsp Dried Thyme |
| 1 tsp Salt |
| 500 ml Water |
| 450 g Basmati Rice, washed |

| Method |
| Add the kidney beans (with liquid) and the Coconut Milk to a large saucepan |
| Now add with the onion, garlic, thyme & salt. |
| Add 2 cups of cold water. |
| Stir through and then bring to the boil. |
| Meanwhile wash the rice in a sieve until the water runs clear. |
| Once the Coconut Milk has reached boiling point add the rice |
| Then stir and reduce the heat. |
| Now simmer until the rice is cooked. |
| Drain if required and serve. |
