| Spicy Sweet Potato Naga |
| Very hot and tasty meat free curry |

| Ingredients |
| 6 Potatoes, peeled and cubed |
| 3 tbsp Olive Oil |
| 125 ml Olive Oil |
| 4 Onions, finely chopped |
| 6 Garlic Cloves, finely chopped |
| 3 cm Ginger, grated |
| 5 Tomatoes, finely chopped |
| 4 Naga Chillies |
| 1 tbsp Garam Masala |
| 1 tbsp Curry Powder |
| Salt, to taste |

| Method |
| Pre-heat your oven to 200c (400f) |
| Heat three tablespoons of olive oil in a large pan or wok. |
| Place the Sweet Potato in the oil and brown on both sides. |
| Set aside |
| Pour the remaining oil into an oven proof pan. |
| Add the onions and fry for about 15 minutes until they are soft and translucent. |
| Now add the garlic, ginger and the Nagas and fry for another minute. |
| Next add the tomatoes and mix well. |
| Now add the garam masala, curry powder and the Sweet Potato. |
| Next add enough water to cover the Potato. |
| Place in the oven for about 20 minutes or until the Potato is cooked. |
| Season with salt and pepper to taste. |
| Serve with plain rice and home-made bread. |
