| Tofu and Peanut Butter Curry |

| Ingredients |
| 3 tbsp Olive Oil |
| 1 Onion, finely chopped |
| 2 Garlic Cloves, finely chopped |
| 2 tbsp Ginger, finely chopped |
| 250 g Pressed Tofu, cut into bite sized cubes |
| 3 tsp Curry Powder |
| 150 g Broccoli Heads, broken into florets |
| 150 g Cauliflower, broken into florets |
| 750 ml Water, boiling |
| 4 tbsp Tomato Sauce |
| 2 tbsp Peanut Butter |
| 1 tsp Salt |

| Method |
| Heat up a thick-bottomed pot then add oil and chopped onion. |
| Cook for 2-3 minutes. |
| Now add chopped garlic and ginger. |
| Cook for a minute. |
| Add the tofu cubes. |
| Cook for a minute. |
| Add curry powder and cook for a minute. |
| Add broccoli, cauliflower, and boiling water. |
| Let it boil on a medium heat, until the veggies are soft. |
| Add tomato sauce, peanut butter, and salt. |
| Stir and let it boil for a couple of minutes, salt to taste if required. |
