| Onion Bhajii |
| The onion bhajii is a spicy Indian snack of which the main ingredient is fried onions |

| Ingredients |
| 100 g Gram Flour |
| ½ tsp Chilli Powder |
| ½ tsp Turmeric |
| ½ tsp Cumin |
| ½ tsp Baking Powder |
| Salt, to taste |
| 25 g Fresh Coriander, finely chopped |
| 2 Onions, thinly sliced |
| 1 Green Chilli, finely chopped |
| Water, to mix |
| Vegetable Oil, for deep frying |

| Method |
| Soak the onions in cold water. |
| Sift the flour, chilli, turmeric, cumin, baking powder and salt into a large mixing bowl. |
| Add the chopped coriander, onions and chillies and mix well. |
| Preheat the deep fat fryer to 180C / 350F. |
| Gradually add enough water to the flour mixture to form a thick batter. |
| Drain the onion well then add to the batter and mix well. |
| Lower heaped tablespoons of the bhaji mixture into the hot oil, a few at a time |
| Cook for a few mins, turning once, until they are evenly browned and crisp |
| Drain on kitchen paper, sprinkle with a little salt and keep warm while you cook the rest. |
